I created a homemade vacuum racking setup. I see most people on YouTube allow their wine to splash into the receiving carboy. Is this good practice? I know this is a semi vacuum but wouldn't it still be an oxidation risk? It degasses but I would think this isn't the best idea.

I've started my first 5 gallon batch and after racking it to a glass carboy for oak aging I noticed that i seem to be getting some condensation on the inside of the carboy. I've been told that i should buy some glass beads or something to help fill this space, but for now I'm wondering if this is going to ruin the wine.
